Coconut Milk

The source of your coconut milk is important when it comes to crafting good-quality coconut milk kefir. You can use homemade coconut milk (my preference), or you can use store-bought canned variety. If using store-bought coconut milk, read labels and avoid brands that use additives and sweeteners. Additives and sweeteners can be hard on the kefir grains and can affect the outcome of your batch. Guar gum is a typical stabilizing agent in canned coconut milk and doesn’t seem to be a problem. I have included two different recipes on how to make coconut milk. The first one involves using young coconuts, which contain a silkier, more gelatinous coconut meat and a sweeter water inside, which when blended, together create a thicker and creamier milk that resembles “coconut cream.” With this recipe you will be able to create a kefir that is similar to coconut yogurt.
